2 Ingredient Banana Pancake (Gluten, Paleo & Dairy Friendly)

This Banana Pancake recipe isn’t exactly a pancake, but it’s shaped like a pancake, eaten like a pancake, just sans the flour in recipe. Yes you heard me. Flourless pancake, just banana and eggs, and taste just as delicious. Whoever created this recipe is a genius.

Now don’t you agree everyone could use less flour in their food intake. Even though I am  intolerant to wheat, I still substitute wheat with other grain flours like rice, buckwheat, millet and sorghum. Whole-kernel grains does conceal an array of vitamins, minerals, phytonutrients and fiber. Baileys Banana Chocolate Ice Cream

Baileys Banana Chocolate Ice Cream. This is the world’s easiest ice cream. It takes literally 5 minutes to put together, only 4 ingredients and the best – without an ice cream maker! *happy dance*

Using good quality chocolate makes a big difference in the flavour, use either chocolate bar like Lindt or couverture chocolate such as Callebaut. The banana gives the ice cream a smooth, creamy consistency and provides the sweetness, so use a nice, ripe one. The ice cream keeps for weeks in the freezer with perfect smooth consistency. Journey to Inner Food – Part 1 & Tropical Green Smoothie

Last month, I was fortunate to be asked to assist in the Journey to Inner Food Workshop, conducted by Daniw Arrazola (the co-founder of Bahay Kalipay – a healing & detox retreat center in Pahlawan, Philippines). From buying ingredients to sourcing for kitchen equipments, it has been an enriching journey. Never have I shopped for almost RM2,000 worth of fresh produce and ingredients!

With the initial thought that it’s a food raw preparation workshop, I was in for a surprise. Before you give me the “sour face”, give yourself the benefit of a doubt and read on..

Beat the heat with these colorful sorbets! These Fruit Sorbets are cool, creamy and surprisingly easy to make, and no ice cream maker is needed. This recipe is very similar to a smoothie, less complex and just as healthy. Millet Porridge

It’s been a while since I had millets and I was missing their nutty flavour. Millet is commonly used as breakfast cereal / breakfast porridge in Himalayas and certain parts of China. Here I use millet to replace my Banana Oatmeal. Although oats have been widely publicized for their heart-protective properties, millet is a grain that should be included on your list of heart-healthy choices because it is highly nutritious and has a good source of minerals.
