Fragrant and addictive coconut cranberry seed bar. Easy no bake munchies in 10 minutes. Refined sugar free, grain free, nut free, dairy free

No Bake Coconut Cranberry Seed Bar

Finally, I’ve discovered an awesome a no-bake bar recipe for you. And I have to warn you – these Coconut Cranberry Seed Bars are pretty addictive!

I’ve made these no-bake bars a couple of times, usually with oats, nuts & seeds. For this recipe, I made it with grain and nut free, so it can be enjoyed by everyone. As it’s that time of the year, I thought the addition of white from coconut flakes and red from dried cranberries would give it a festive feel. The finished product didn’t turn out as I earlier envisioned. In fact, it was even better with the specks of white sesame against the green pumpkin seeds and red dried cranberries. Perfect! And the fragrant coconut flakes just made me wanting to go back for more, over and over until I have to tell myself to stop. A couple of times 😀 Continue Reading →

Aromatic & nutritious sprouted Pumpkin Seed Butter

Sprouted Pumpkin Seed Butter

Sprouting is something mama have been doing on and off over the years, and I’ve picked up the habit a few years back, mostly sprouting alfalfa. It was only recently that I branched out into sprouting grains and legumes, after having found them being packed with nutrients and easy on digestion.  Continue Reading →

Baked Vegetable Chips with Tahini Dip

April 2, 2014 by Shannon Lim-de Rooy | 8 Comments

Vegetable Chips with Tahini Dip I would crave for salty potato chips once every few moons and get a bag of all natural chips. After 1/3 through the bag in a sitting, I would get some weird reactions and just couldn’t stand the sight of it. It’s probably my body sending me signals. Talk about fast reaction. So what would a girl to do when she has the cravings again? Bake some sweet potato fries and chips. Sometimes I made them for breakfast too. Continue Reading →

Ten-Minutes Stove Top Granola

Stove top Granola

Don’t laugh. I brought 1kg of my granola on my Europe vacation. As most breakfast options in Europe are wheat based food, my granola was my breakfast, my snack- sprinkled on yogurt parfait and my traveling munchies.

I love making big batches of granola. But sometimes there’s not enough ingredients to make a big batch. Or it’s just too hot to turn on the oven. Or the oven broke down, just like mine did after I came back from vacation. Continue Reading →

Penang Muar Chee (Sticky Rice Balls with Peanuts)

I’m a very simple girl with simple taste buds. It is the simple recipes that makes me happy and savour with a sweet smile. I have savored some of the best fine-dining food – caviar, cheese, terrine, exquisite pastry. However, it’s too heavy and luxurious for my taste. No offense to the brilliant chefs, I wanted something without cream or excessive details; I wanted something simple and straightforward like Malaysian food. And one of them is Muar Chee. Nasu Dengaku (Grilled Miso Glazed Eggplant)

Eggplant (or aubergine) is one of my favourite vegetable. Whenever I come across an eggplant recipe, my heart gives me a tug..

I have not heard of Nasu Dengaku (Grilled Miso Glazed Eggplant) until I saw the recipe topping up in a number of blogs recently.  No wonder I’ve not tasted this dish as it’s a fairly typical Japanese dish you’d get at an Izakaya (Japanese tapas bar). I don’t think I’ve been to an Izakaya.. Continue Reading →

2 more days to Chinese New Year and I’m totally overwhelmed with last minute preparations. Homemade Oat Biscuits

Homemade Oat Biscuit

When mama came visiting recently, I made these oat biscuits for her. I was happy to have found a gluten free recipe here. The biscuits were crumbly and a tad too bland for me (with just ¼ teaspoon sea salt). Mama was happy with the bland taste, but it was horrifying for me to realise how much more sugar & salt was in the store-bought biscuits. Continue Reading →
