Delightfully moist Banana Bread Muffins with Macadamia Nuts & Dark Chocolate, cute single serving that is a great grab-and-go snack.
What a month it has been. I have some very exciting news to share. Sorry for diverting a little bit. A production company contacted me a while back if I were keen to appear on Chef Luke Nguyen’s show in KL. Being a fan of his tv shows, my favourite being Luke Nguyen‘s Vietnam, naturally I said yes! I was among a few other bloggers showing Luke our favourite secret Malaysian eats and street food vendors. The filming in KL is one of the episodes for Street Food Asia airing next year. It was awesome to find out that Luke just exactly like how he is on tv, very down to earth and funny, though behind the scenes he takes his work very seriously. Just having the experience of showing Luke our delicious Malaysian food is priceless and fun. Crossing my fingers that my few seconds on the show, does not get cut out by the director. A healthy treat that makes you wanna to lick them clean and leaves you feeling good!
When I have excess bananas and they are ripening at a faster rate than I can finish them, I would normally make banana bread, or cut them into bite size pieces and freeze them. The best Flourless Chocolate Cake ever – decadent rich chocolate flavor with an airy souffle-like texture! Healthy & impressive dessert. Gluten, grain, nut & dairy free.
If you have not noticed by now, there is only one whole cake recipe here. There are a handful of baking recipes but I try not to venture into cakes. Baking is not one of my strengths when it comes to inventing healthy, gluten and/or dairy free recipes, and every time the cake ended up being the casualty because I have forgotten baking is not easy.
Flourless chocolate cake has been on my baking list for a while (having pinned a dozen of flourless chocolate cake recipes). I was all pumped up to make one for the year end celebration with my awesome new Tefal Kitchen Machine and having dreamt about blogging how easy the recipe was and how amazing the cake is. This is my typical daily Big Breakfast Oats, except it looks like a pile of mess on most days (like my Banana Oatmeal recipe). This is my evolved breakfast oatmeal. I used to burnt my oatmeal.. quite often.. sigh.. I’ve received enough stern looks. I’m really bad at multitasking – cooking rolled oats on stove while brushing my teeth or picking my clothes. Without knowing it, something smelt burnt. My poor pot has seen better days. Continue Reading →
I’m in a rut. I’m not in any mood to make any Chinese New Year goodies at all. My usual favourites – peanut cookies and bak kwa (dried meat) doesn’t turn me on. Don’t get me wrong. I have a sweet tooth and am a big snack eater. Something is just not turned on this year. The only thing I felt like making is this deliciously chewy (and healthy) Flourless Peanut Butter Cookies.
