My digestion has acted up quite badly from early this year, causing me restless nights and fatigue relapse. My road to recovery from leaky gut is ongoing since 2 years, thus having the bloating symptoms reoccur can be frustrating. I’m in a rut. I’m not in any mood to make any Chinese New Year goodies at all. My usual favourites – peanut cookies and bak kwa (dried meat) doesn’t turn me on. Don’t get me wrong. I have 2 confessions to make.
1st confession – I’m not a morning person and I become grouchy bear if I’m on empty stomach. So stay away from me in the morning, especially if I didn’t get my breakfast. I will try to get as much sleep as I possibly can before waking up, I’d rather get an extra 15 minutes sleep than using them to do my hair or make-up.
2nd confession – I l used to eat in the car while driving to work, and I still do now when I’m running around in the morning.

This Banana Pancake recipe isn’t exactly a pancake, but it’s shaped like a pancake, eaten like a pancake, just sans the flour in recipe. Yes you heard me. Flourless pancake, just banana and eggs, and taste just as delicious. Whoever created this recipe is a genius.
Now don’t you agree everyone could use less flour in their food intake. Even though I am intolerant to wheat, I still substitute wheat with other grain flours like rice, buckwheat, millet and sorghum. Whole-kernel grains does conceal an array of vitamins, minerals, phytonutrients and fiber. Don’t laugh. I brought 1kg of my granola on my Europe vacation. As most breakfast options in Europe are wheat based food, my granola was my breakfast, my snack- sprinkled on yogurt parfait and my traveling munchies.

It has been 2 years. Time just fly. It seems like yesterday was my first post on Homemade Granola. Of course if you were to compare my first photo then and the photos now, you will notice the difference in my growth with this blog. Do I cringe when I see my old photos? Of course. Many times I’ve contemplated to reshoot my old recipes. Besides not having the time for that, I decide to keep the history, instead of erasing it. I am eternally grateful for the rocky beginning that pushes me to improve my cooking skills. I started blogging with the recipes I cook daily, even just for 1 person. To share and inspire others to start cooking too. My family made fun of me.. “How can you post your recipes online? Aiyo so malu (embarassing)”. “Don’t waste your time cooking & blogging, go do something more useful.” From that to teaching cooking class is a HUGE thing for me. His cousin who have major health issues with 3 stents placed in his arteries (stents are tubes placed into blocked arteries to help the blood flow) and very overweight. If you hardly eat plain yogurt, you are missing out on the various delicious ways to enjoy yogurt. I always have a tub of homemade yogurt in my fridge..
